Dining Notes: Jacksonville chef makes an impression in New York
It's not every day that you get to cook at an event with the likes of Emeril Lagasse, Martha Stewart and other culinary luminaries.
But chef Richard Grenamyer , of Jacksonville's Blue Fish Restaurant and Oyster Bar , was one of more than 40 chefs asked to do just that at this year's Chefs & Champagne New York fundraising event for the James Beard Foundation.
The annual summer tasting party, held Saturday at the Wolffer Estate Vineyard in Sagaponack, N.Y., honored chef and TV personality Lagasse for his culinary contributions, including those for culinary arts education.
Grenamyer was one of just a handful of chefs outside New York asked to cook at the event.
"It was a big honor to be invited," Grenamyer said Tuesday morning, hours after making the 19-hour drive back to Jacksonville. "There were some pretty heavy hitters there," he said.
In addition to transporting nearly all of the equipment and supplies he needed for the event last Tuesday, there were "a lot of other hurdles" to overcome to get his food prepped before Saturday's big event, he said.
Chief among those was finding time and space at his New York City-area host restaurant to get his work done. "The restaurant was so busy, I had to work at midnight, 1 or 2 in the morning," he said.
Another obstacle was the punishing heat wave gripping the Northeast and much of the rest of the country.
"It was brutally hot, probably 100 degrees in the tent," he said.
But that didn't stop the event's guests from enjoying Grenamyer's Soy and Ginger-Glazed and Black and White Sesame-Crusted Tuna with Wakame and Wasabi Cream. (It's the same entree you'll find on the dinner menu at Blue Fish.)
"People were coming back to the table five, six times to compliment the dish," he said. And these were people who knew food, he said. "They weren't just there for the wine."
Among those was Stephanie Krikorian, writer for The Wall Street Journal blog Speakeasy.
Grenamyer's cooking was one of the event's "greatest joys," she wrote in the blog.
Grenamyer said he also received compliments from several of the event's guests who had visited his Avondale restaurant at 3551 St. Johns Ave.
"It was a great experience," he said hours before boarding a plane to Memphis for his next great experience — to see his first granddaughter, who was born two weeks ago.
